Southwest Chicken Salad

Okay…let’s start with I was born in Texas. Therefore any reason to pair a food item with tortilla chips is simply in my DNA! Hello, TexMex lover here! And I pretty much keep chicken salad stocked in my refrigerator weekly because it is such a quick and easy lunch option for both the kids and me.

Now, let’s pair those two together….

chicken salad + tortilla chips = lunch love!

I love a classic chicken salad, but it is always fun to change things up a bit! This chicken salad has corn, avocado, cilantro…and no mayo! So super yummy! And if you were trying to be more paleo, keto, low carb friendly, you could have this in lettuce wraps! Such a treat!!

Pulled roast chicken – about 2 cups (tip: some grocery stores will pull it for you!)
Bag of frozen corn
Two avocados
1 Lime juiced
1 Tsp cumin
1 tsp salt
1 tsp Pepper…could use chipotle chili powder for a smokier finish
Cilantro – about 1/2 cup chopped
1/4 olive oil

Mix all ingredients together in a mixing bowl and serve in lettuce cups or with tortilla chips! Try Siete brand grain free tortilla chips in the lime flavor!
