This summer pasta dish is so refreshing, and light, that it is great for dinner or lunch, and can be served hot or cold.
It’s also easy and quick to prepare!

Ingredients
Tortellini (I use Buitoni mixed cheese)
Asparagus
Yellow Bell Pepper
Fresh Lemon
Olive Oil
Shredded Parmesan cheese
Dijon Mustard
Salt and Pepper

Start by putting a pot of water on the stove to boil
Then chop your asparagus and yellow bell pepper

Boil the tortellini

Make your dressing while the pasta is boiling
I used organic avocado/coconut blend oil
Dijon mustard
Salt
Lemon Zest
Fresh lemon juice






When the pasta is about halfway done, add the asparagus and bell pepper to cook with it

Drain the pasta and vegetables


Add the dressing and mix well

Serve in a bowl or plate 
Add fresh cracked pepper


Top it off with parmesan cheese shreds

You could also add pine nuts to this recipe, or fresh garlic would be so yummy!
