Fruit Pizza – Healthy Version

My youngest daughter LOVES fruit with all her heart, so for her birthday this year, I made her a healthy, dairy free, gluten free pizza that was so delicious I had to share with you all.

I used coconut flour in this, and let me tell you, it smelled like Heaven in my house when the crust was baking.   YUMMMMMM, just a side perk!

First, the ingredients.

3 cups fresh fruit (whatever is in season, or that you love)

3 tbsp. Almond Milk

1 Egg

1 can coconut cream, whipped

1/4 cup maple syrup or honey

1 tbsp. maple syrup or honey

1/4 cup arrowroot starch

1 cup coconut flour

1/4 tsp salt

2 tsp vanilla extract

1 shortbread crust

1 cup coconut milk/cream

1/4 cup coconut oil

Preheat Oven to 325F.    Mix coconut flour, arrowroot, and salt in a medium mixing bowl.  Add maple syrup, coconut oil, egg, and vanilla, and blend together.

Spread mixture onto a pizza pan and bake for 8-10 minutes or until it’s a light golden brown.    Remove and let cool completely before assembling the pizza.

Make sure your can of coconut milk/cream has been refrigerated for at least 3 hours or until the cream and water have separated.   Drain the water/liquid part of the can and use only the cold (hard) coconut cream.    Place the hardened coconut cream into a mixing bowl along with 1 tbsp. honey or maple syrup.   Mix with a blender or whisk until fluffy.    Add more sweetener as needed.

Make sure the crust is completely cooled before assembling the pizza.   Spread the coconut whipped cream over the top of the crust.

Begin topping with sliced fruit in whatever arrangement you like.

Keep refrigerated until ready to serve.    Enjoy!
