So if you read a lot of my recipes, you will notice my tendency to look for quick and easy options! AND….I kinda love my crockpot. I tend to try to make healthier versions of those crockpot recipes when I can, but a turkey breast in the crockpot checks off both boxes….easy and healthy! Plus, if you are looking for a last minute Thanksgiving….or any night of the week…recipe, this crockpot turkey breast might just be right up your alley. It easily feeds a family of four with leftovers…..or a family of six just for the special day!
Start with 3lb turkey breast. Butterball is always easy to find, but I find that people don’t always know where to shop for a turkey breast. They tend to be in the frozen meat section…usually at the bottom of the glass case. Not sure why on the bottom, but that is usually where they live….haha! And be sure you don’t grab a full size turkey by accident….only the turkey breast! Yum!
Let your turkey breast slow thaw for 24 hours in your refrigerator. Then you are ready! Open the package, remove the gravy (keep it if you want to make some…we usually toss ours!). Pat the breast dry with a paper towel….this is key to any browning!
I like to rub mine with a little butter (we use a butter alternative to make it dairy-free!), and then I sprinkle it with a generous amount of Herbs de Provence! Have you ever cooked with it? Wow! It smells and tastes amazing!!
Now, my key secret is a 1/2-1 cup of dry white wine in the bottom of the crock pot! It really adds some great flavor!!
And here is a great tip!!! If I open a bottle of white wine and either don’t like it or don’t get to finish it before it goes bad (I know…it is rare!! haha!), I will freeze it in ice cube trays. Each cube if roughly 1oz. So, you could use 4-8 cubes of frozen wine in your crockpot!
Turn your crockpot on low and cook for 8 hours or on high for 4 hours. Check it with a meat thermometer for doneness!

Last Minute Thanksgiving: Crockpot Turkey Breast
Serves 4-6
Ingredients:
- 3lb turkey breast
- Butter (1/2 stick or 4tbs)
- Herbs de Provence
- 1/2-1 cup of dry white wine
Using a 3lb turkey breast, pat dry with paper towels. Set in crock pot. Rub with butter and sprinkle with Herbs de Provence. Add white wine to the bottom of crock pot. Set temperture to low and cook for 8hrs. (Or high for 4hrs). Check with meat thermometer for desired doneness. Serve with a side of roasted veggies, a salad, and cranberry sauce!
