Texas Caviar

A wonderful New Years Day tradition is to eat black eyed peas to bring luck and prosperity in the new year.  Well, I do eat them every year, though they are not my favorite tasting bean, so I love this Texas Caviar made with them that kind of masks the flavor.   In other good news, this dip is gluten free, dairy free, soy free,etc. so it’s great to take to a party to enjoy with others.

Ingredients:

1 or 2 cans of Blackeyed Peas

1 can whole kernel corn

1 can black beans

1 pint cherry tomatoes

1 small red onion

1 fresh jalapeno

1 bunch of fresh cilantro

1 or 2 fresh limes

Wishbone Italian Dressing

Garlic Powder to taste

Salt to taste

Bag of chips

 

In a large Pyrex bowl, combine all the beans, peas, and corn

Wash the fresh veggies…

Next chop up the cherry tomatoes…I cut them in 1/8 pieces, but you can do them bigger if you want.

Next I chop the cilantro and onion and  add them to the mix…isn’t this looking pretty with all the colors?!

Chop the jalapeno, and de-seed it

Chop it into small pieces and add it to the mixture

Cut the lime in half and use a juicer to get the contents into the bowl

Mix everything together

Add about half the container of Wishbone Italian Dressing

Add salt and garlic powder to taste

Mix again

Voila!   Serve with your favorite chips
