The Perfect Five Minute Tailgate Dip

Yep….it’s football season!

It is our husbands’ favorite time of the year….(and kind of ours, too!) is it the same in your house?? Are you a closet football fan? Our homes cheer for quite a range of teams:

  1. Ole Miss
  2. Nebraska
  3. Southern Methodist University
  4. University of Texas
  5. University of Arkansas

Our homes are full of ponies, huskers, rebels…or landsharks, longhorns, and razorbacks…..you can imagine the herd of confusion that our kids are experiencing as we cover the deep south to the midwest! :):)

And with the tailgating or just enjoying the game from “couchtown” you always get the munchies….or you are hopefully entertaining your fellow fans because Heaven only knows that you can’t watch the game with the opposing team. Haha!

One of my favorite tailgate (or any other occasion) dips to whip up is a large bowl of corn salsa! It is so fresh and yummy and such a crowd-pleaser!

You start with either frozen corn….or you can lightly steam 2-3 ears of corn in the microwave (2 min per ear…and then cut it off the cob). I prefer using one package of frozen corn because it is quick and easy, and I can always have one in the freezer. Empty the corn into your bowl.

Chop up a small red bell pepper, and de-seed and chop a jalapeno. I usually chop everything up to be about the same size as the corn kernels.

Chop up cilantro…..about 1/4 cup….or more if you love the flavor! Add lime juice + salt + a tsp of olive oil. And the key ingredient is CUMIN! I use a heaping tablespoon….and sometimes a little extra. 🙂

Stir it all up and let it sit for about 30 min before serving. Taste before serving to see if it needs any extra lime or salt. This should be seasoned to your tastebuds. There is not right or wrong answer. I prefer a stronger flavor from my ingredients! This is such a favorite, and it can be served with corn chips. It looks especially nice with blue corn chips! 🙂

 

 

The Perfect Five Minute Tailgate Dip

1 package of frozen corn
1 red bell pepper
1 jalapeno
1 small bunch of cilantro
1/4 cup of lime juice
1 tsp+ of salt
1 tsp olive oil
1 heaping TBS cumin

De-seed the jalapeno. Chop jalapeno, bell pepper, and cilantro. Add all ingredients to your serving bowl and stir. Chill for at least 30 minutes before serving. Serve with corn chips (blue corn preferred for color! :))
