I HEART breakfast tacos, but being gluten free, dairy free, low sugar, and trying to be grain free has its limitations….or at least it seems that way sometimes. But low and behold, I had all of that this morning in my breakfast tacos….and they were absolutely totally and completely delicious! I would truly put them to the test with any regular breakfast tacos. Let’s make these together!
First, I recently found these Siete grain free tortillas! They have several flavors, but I love anything made from almond flour!
Next came organic beans! You could use any variety…I had pinto in my pantry and went with those! Just something that really sticks with you!
Then I added all of my yummy fillings…protein was boiled egg of course. You could also try bacon for a scrumptious variety! And, no breakfast is complete without incorporating avocados in some way, shape, or form. I happen to LOVE Wholly Guacamole, and these individual portions come in handy! Lastly, I topped it with cilantro! Yum! Love that freshness it adds!
Lastly, roll them up and top with your favorite salsa! Easy, breezy, and waaaaayyyy delicious! I don’t feel like I’ve missed out on any dairy, gluten, or grain, and my body thanks me for these decisions! Bon apetit!
Grain Free Breakfast Tacos
1 serving per recipe or 2 tacos
2 Siete grain free tortillas
4 Tbs cooked beans (your choice)
1 Hard boiled egg sliced
1 Individual serving of Wholly Guacamole guacamole
Cilantro to taste
Salsa to taste
Bacon and dairy free cheese optional!
Lay out two Siete tortillas, and fill with beans and hard boiled egg. Warm in microwave for 20 seconds. Top with Wholly Guacamole guacamole and cilantro. Roll, and spoon salsa on top! Two minutes to breakfast!
